Blueberry Cream Cheese Buckwheat Pancakes!

Starting the day with a farmtastic breakfast topped with home made whipped cream! *1 cup heavy whipping cream(cold) from Valewood Farms *2 Tbsp pure maple syrup from McCormick Family Farm

Add together in a small bowl. Mix with electric mixer until you achieve a whipped cream consistency(just a few minutes). Always try to start the day with a farmtastic nourishing breakfast! Recipe: *  1 3/4 cups milk*  8 oz cream cheese*  2 eggs*  1 1/2 Tbsp butter, melted*  1 tsp vanilla extract*  2 Tbsp lemon juice (optional)*  1 1/2 cup buckwheat flour (or all  purpose)*  3 Tbsp sugar*  1 Tbsp baking powder*  1/2 tsp sea salt*  1 3/4 cups blueberries

Mix together: milk, cream cheese, butter, eggs, vanilla and lemon juice. Add flour, sugar, baking powder and salt. Blend until mixed well. Fold in blueberries. Let batter sit for 10 minutes. (The hard part lol). Pour desired amount on hot griddle until a few bubbles start to form. Flip. Cook a few more minutes. Top with whipped cream and additional blueberries. Drizzle with pure maple syrup. Enjoy!
